Here is another example of the chocolate covered gingerbread cookies popular at Christmas. These are made by the German company Bahlsen. These particular ones are covered with dark chocolate, rather than milk chocolate, a trend that many companies are following, far more products are appearing that incorporate dark chocolate, a trend that I heartily approve of.

Okay I was thinking about making you Chocolate Espresso Hazelnut Shortbread cookies...But I was wondering how would you ground the hazelnuts, I have never worked with hazelnut, so I am not too sure..Thanks-perez
Best way is to toast them first, but for this cookie, it's not necessary.
Just use a food processor or blender, add some of the sugar from the recipe (like a tablespoon's worth), and grind them till they are fine (very small flakes). It should take only about a minute. For cookie recipes, they don't have to be that small, so don't worry about getting it perfect.
Caution: If you overgrind, then they turn into a liquid (also good, but not in a cookie recipe - you get nut butter, which is good spread on bread).
